Coconut cookies

Ingredients :

  1. 6 tablespoons pure Rawgranules coconut oil
  2. ¼ cup and an additional 2 tbsp peanut butter
  3. ¼ cup date syrup(depending on sweetness)
  4. ¼ cup dark cocoa powder
  5. 1 teaspoon vanilla extract
  6. 1 pinch salt
  7. 1 cup rolled oats

Method :

  1. Keep aside cake baking tin.
  2. In a small microwave safe saucepan pour 5 tablespoons coconut oil and stir together 2 tablespoons peanut butter, ¼ cup dates syrup, ¼ cup cocoa powder, 1 teaspoon vanilla extract, and 1 pinch salt and keep it to melt in oven for about 10-15 seconds. When fully combined, remove from heat and stir in 1 cup rolled oats. Pour into baking tin. Refrigerate while making the peanut butter topping.
  3. In a small saucepan over low heat, stir together ¼ cup peanut butter, 1 tablespoon dates syrup, and 1 tablespoon coconut oil. Spoon the warm peanut butter mixture over the chocolate oat mixture. Freeze for 15 to 20 minutes until set, or refrigerate until serving. Store refrigerated.
